ROYAL ICING RECIPE  (click here to print)

Ingredients:

  • 3 ounces of egg whites
  • 1 tsp vanilla extract
  • 4 cups of powdered sugar

Directions:

In large bowl of use either a hand mixer or a stand mixer and combine the egg whites and vanilla and beat until frothy.

Add powdered sugar slowly and mix on low speed until sugar is incorporated and mixture is shiny.

Beat on high speed for approximately 5 -7 minutes, until mixture forms stiff and you get glossy peaks.

Add food coloring, if desired and place in piping bags. Store in airtight container in refrigerator for up to 3 days.

LET'S START MAKING

Tape your template to a cookie sheet. Cover the template with wax paper and tape it to the cookie sheet. Now pipe your Royal Icing onto the wax paper tracing the template. Allow to dry for 12 hours, then carefully peel the decorations off the wax paper and place them face down on a paper towel to dry for another hour or two. You want them hard! 

Next, whip up a batch of cupcakes. I used my homemade VEGAN chocolate cake recipe for my cupcakes, which makes approximately 30 cupcakes and takes approximately 15 minutes to bake.

For the "sand" on the top of our cupcakes I finely chopped (or you can crush) graham crackers. I set this aside while I make the frosting.

While the cupcakes are cooling make homemade vanilla buttercream frosting. Once your cupcakes are cooled completely use a butter knife and add a tin layer of frosting. 

TIME TO DECORATE

Pour some of your crushed graham crackers onto a plate in a pile. Turn a frosted cupcake upside down and dip the frosting in the "sand". 

Using some of the buttercream icing, "glue" some of your cactus blooms to the cactus. 

Carefully push cactus pieces into the tops of cupcakes and serve!
