Ingredients:
- 1 cup of heavy whipping cream
- 14 oz can of Sweetened Condensed Milk
- 1/2 cup freshly squeezed lime juice + zest from one lime
- 1 prepared graham cracker crust
For whipped cream decoration:
- 1/2 cup heavy whipping cream
- ½ - 1 tablespoon sugar
- 1/2 teaspoon of pure vanilla
Directions:
Whip one cup of heavy whipping cream until soft peaks form. In a different bowl mix together the sweetened condensed milk, lime juice and zest. Slowly fold in the whipped cream to the lime mixture until combined. Gently pour mixture into piecrust and freeze for at least 2-4 hours before serving.
For the whipped cream decorations; pour 1/2 cup whipping cream into a bowl, add sugar and vanilla and whip until peaks form. Give it a taste and see if you need more sugar. Place whipped cream into a piping bag with a star tip and decorate your pie around the edges and a nice big dollop to the center along with a pretty curl of lime zest.
The whipped cream decoration freezes well with the pie, so you can add it before you place the pie in the freezer over night before serving.
Here is a little video I put together showing how I created this pie...
I do believe I love this pie more than the traditional Key Lime Pie and that is saying a lot. It has an ice cream consistency with the delicious sweet and tangy flavor of lime. Give it a try, you won't be sorry!
