- 2 cups Bisquick
- 2 tbls brown sugar
- 2 tsp ground cinnamon
- 2 eggs
- 1qty 12 oz can of Evaporated Milk
- ½ cup canned pumpkin
- 2 tbls vegetable oil
- 1 tsp vanilla extract
Directions
Mix together dry ingredients in one bowl and wet ingredients in another bowl. Slowly combine the wet into the dry ingredients together. Spray a griddle with cooking spray. Pour 1/3 cup full of batter onto lightly greased hot griddle. Flip pancake when bubbles appear and pop. Be sure to check on temperature as pancakes will burn easily since they have sugar in them.
Serve warm with whipped cream and chocolate chips.
