Easy Homemade Caramel Corn
Homemade Caramel Corn of my absolute favorite snacks. My mom made caramel corn for us when I was a kid and I started making it about 10 years ago using her recipe and everyone who tries it, loves it. Every Christmas I make several batches and fill up decorative tins to give as gifts. This year I decided to use puffed corn instead of popped corn and it was just as delicious!
CARAMEL CORN (click here to print)
Pop 8 quarts of popcorn ( 1 cup of kernels) place them into a very large roasting pan or stainless steel bowl. (must be oven safe)
In a large saucepan combine the following:
1 cup butter
2 cups light brown sugar
1/2 cup light corn syrup
1 and a 1/2 teaspoons vanilla extract
Heat on medium heat and bring to a boil for 5 minutes. Remove from heat and stir in:
1/2 teaspoon baking soda
Pour caramel sauce over popcorn and try to coat as much popcorn as possible.
Place caramel corn in a 250 degree oven and bake for 1 hour, stirring every 15 minutes.
Layout out sheets of wax paper on a large surface, pour caramel corn out and separate pieces to cool. Once cooled place caramel corn in air tight containers. ENJOY!
